Harvest Bisque Soup

This is the recipe that defines fall for me : I double it because I can never get enough. One of my favorite lunch spots, Cary Cafe, posted this recipe in the N&O a few years ago. I tried to make it before they published it to no avail. I can't believe the didn't keep this secret...but here it is. 

Ingredients:

2 tablespoons butter
1 cup roughly chopped onion
1 cup peeled and roughly chopped Granny Smith apple
1 cup peeled and roughly chopped rutabaga
1 cup peeled, seeded and roughly chopped butternut squash
1 cup peeled and roughly chopped carrots
1 cup peeled and roughly chopped sweet potato
1 quart chicken stock
1 cup heavy cream
1/4 cup maple syrup
Salt and cayenne, to taste

Directions:

Melt butter in a large saucepan or Dutch oven over medium-high heat. Add onion, apple, rutabaga, butternut squash, carrots and sweet potato. Cook, stirring occasionally, until onions are translucent and vegetables begin to soften, about 5 minutes.

Add chicken stock and bring to a boil. Reduce heat and simmer, stirring occasionally, until all the vegetables are tender, about 30 minutes. Remove from heat.

Puree the soup with an immersion blender. (Or transfer to a food processor or blender and, working in batches if necessary, puree. Caution: Allow soup to cool somewhat before pureeing in a blender, as very hot liquids tend to erupt from the jar while blending.) Return soup to saucepan.

Add cream and maple syrup to the soup, and season with salt and cayenne. Reheat, if necessary, and serve hot.

Makes 10 servings.

Per serving: calories, 170 (59% from fat); fats, 12 grams (7 grams saturated); cholesterol, 39 milligrams; carbohydrate, 16 grams; sugar, 9 grams; fiber, 1 gram; protein, 2 grams; sodium, 180 milligrams


**** I always serve it with rosemary bread...and a ham or turkey is good with it too. ****

**** also for those with babies, Ella loves this soup...I just pull some out for her before I add the cayeene.

Vollmer Farms - Luke's 1st Class Picnic

Some kids from Luke's preschool class... they made cute tee shirts for the picnic.  Luke & I went last Wednesday & Aunt Sara had a pajama party with Ella & Sadie! Thanks Sara!!! Luke really enjoyed/needed the alone time with mommy! 

This is Anna. I went to school with her dad & mom. The pumpkins were not as big due to the rain shortage this year.

There were classes that taught the kids everything from how many stomach's a cow has (4) to how to make butter. All you need is one cup of heavy cream, 5 bolts (cleaned), one clean mayo jar, and a fun song about "butter mak'n".  And YES, we did make butter and it was AWESOME. AND we ate it on crackers. Luke had 4!

We shall be returning to Vollmer Farms in lieu of the fair.  It is WAY more age appropriate for my kids and I thoroughly enjoyed it myself! I think they must sell food to Wholefoods as well. I know they had homemade pumpkin ice cream & killer chili

I highly recommend this place for family fun time.....

Luke borrowed the wagon and hooked up his trailer. He told me he was headed out to the beach "in the morning". He hitched it up pretty good and drove around until he ran out of gas.

He packed the necessities as you can see here. The world, glove, baseball, train, Ella a toy, and her monkey rattle, and his shovel to make a sandcastle. He even put his Buzz Lightyear cell phone in the truck. Too cute!

Birds, Bees, and Babies......

Greg and I are transfering all of our old pics from the PC to the Mac. It is a long process because we have so many of Luke's early years. We had a terrible camera so many are not what one would consider "frame worthy" but they are full of so many memories. I honestly sat here and boo hoo'd my eye's out just watching them quickly upload. Time just goes by so quickly. 

As I was looking through some of these pic I found this one of the day I told Luke we were having a new baby sister/brother. I wrapped him up a baby doll and wrote him a letter about how important and awesome his new adventure would be to be a big brother. He opened it and cared more about the paper. He was only two so he really had no understanding of what all was about to transpire. 



Luke randomly mentions the day that Ella came home from the hospital. He really thinks we just went there and picked her up. He understands that he was once a baby and now he is "getting bigger" and is not a baby anymore. He is our "big boy". Tonight, at the table, Luke asked daddy...."do you remember going to the hospital and getting the baby?". I had to remind Greg that he was remembering when Ella came home to live with us. Luke takes it one step further this time and asks...."were did Ella come from"..."who made Ella".  I laughed because it sounded like it could be a birds and bees question. I just told him that God made Ella and God made him, mommy, daddy, and everyone. 

The kids have really began to bond on a deeper level these days. Luke always talks about how he loves Ella...his sister.  He always tries to feed her and make her laugh. I really think that family identity is starting to set in for him. He feels like he has some ownership of Ella. When I think about how much Luke's life changed in one year, I pray that his love for Ella grows and grows and he truly sees her a blessing in his life.

Here is a pic from my farm in the fall. I love it here......in my dreams! 

No really, my farm doesn't look exactly like this bc my house is way cooler but the red barn is the same. I roll around in my gater and grow stuff that won't die. I have a few self sufficient animals that cook for me in order to save their own lives.  I wear aprons all day and occationally I take my bun down. So yeah....


Here are my top ten reasons for loving the fall......

  1. the smell in the air - "the fall smell"
  2. pumpkin spice latte's ....and anything pumpkin
  3. butternut squash bisque - I will be posting the recipe - k-i-l-l-e-r
  4. the unforgetable fair 
  5. colorful changing leaves - and the smell of them burning
  6. sweatshirts and coats
  7. going for walks
  8. holding hands with Greg outside
  9. hammocks
  10. the month October
